The color begins in the bran
Black rice retains its outer bran layer. Naturally occurring anthocyanin pigments in that layer contribute the grain’s dark purple-black appearance. As the rice cooks, the color can deepen and spread into the cooking liquid, turning the finished bowl shades of violet and purple.
A more substantial texture
Because the bran remains, Emperor Black Rice has a firmer, pleasantly chewy bite. The flavor is gently nutty, with subtle sweetness. Those qualities let the grain hold its own beside roasted vegetables, fresh herbs, citrus, toasted nuts and savory dressings instead of disappearing beneath them.
Three ways to bring it to the table
Build a grain bowl with contrasting vegetables and a bright dressing; cool the cooked rice and fold it into a composed salad; or simmer it longer for porridge or rice pudding.
