Understanding Low GI

Glycemic index, or GI, describes how a carbohydrate-containing food affects blood glucose under standardized test conditions. PRYD’s Fields of Vitality varieties are certified Low GI, with GI below 50.

GI is one part of understanding a meal. It does not remove the carbohydrate in rice or predict every person’s response. Serving size, preparation and the foods eaten alongside rice also matter.

What Makes the Varieties Different

Grain and texture

Basmati is known for long, slender grains and a light texture. Short Grain Aromatic offers plump grains with a softer, gently cohesive character.

Parboiling and structure

Soaking, steaming and drying before milling changes the starch structure of parboiled rice and contributes to its firm cooked texture.

Color in the bran

Emperor Black Rice retains its dark bran layer. Anthocyanin pigments contribute the purple-black color of the grain.
